I walked into my kitchen earlier this week and I saw my bananas are going bad, I was literally like no way! These are no ordinary banana, these are organic bananas the Gucci of bananas😀
Trust me I don’t let my organic produce go to waste they cos a bit.
I immediately decided to make something healthy with it. Gluten free oatmeal pancakes is actually one of my favorite because of my allergy to gluten but this time I decided to add banana.
1/2 cup Almond Milk
1 Banana ( mashed)
2 Tablespoons Maple Syrup ( or honey)
1 1/2 cups gluten free oatmeal
2 teaspoons Baking Powder
1/4 - 1/2 teaspoon Salt
1 teaspoon Vanilla
1 tablespoon coconut oil
* I make my own oatmeal flour, I just grind them in my blender, if you are not allergic to gluten you can use regular oatmeal.
Add all wet ingredients together
Mix with dry ingredients
Heat skillet over medium heat. Once warmed, spray non stick oil or place coconut oil.
Pour pancake batter into skillet in round circles.
Cook for 2-3 minutes on one side. Turn over and cook for another 1-2 minutes.
Serve with a drizzle of maple syrup and toppings of choice.
